1/2 cup shortening
1 cup whole wheat flour
1 teaspoon salt
3 Tablespoons ice water
Add the shortening, flour and salt and use a pastry blender to break it all up into about the size of a pea. Then add the ice cold water 1 Tablespoon at a time (depending on your flour you may use less or more) I use a fork to mix it all together.
Shape it into a disc. Then roll it out for your pie. This will be enough for a 1 crust pie. Or 3 small ones =)
It is a little more crumbly than a white flour crust... but you can easily piece it all together. I then used a fork to prick the bottom.
My filling was 3 cups of blueberries, 1/3 cup of agave, and 1 Tablespoon cornstarch. I baked them at 375 for 35-40 minutes. (Sorry forgot to take a picture after I baked them.)
Then I had seen a recipe for Strawberry Ice Cream here, that sounded out of this world yummy... so I decided to try it too! Hehe! I substituted Agave for the sugar in her recipe and used blueberries instead of the strawberries.
I used a potato masher to mash my blueberries...
I just stirred in my other ingredients, let me tell you when I licked the spoon! OH my Heavens delish!!! I could have eaten it all without freezing it!
I did put it in the freezer though!
Yummo! Try this one, if you are serious about trying to eat a healthier diet even the hubby enjoyed it! Did he enjoy it more than a regular pie and ice cream? No, but he'll live with it if that's the only way he can have it! Haha!
